Balsamic vinegar with button Mushrooms . Two of my favorite things. One I like to cook with, the other I like to cook and eat. Light bulb and an idea! Why not cook them together. And I did. The results were worth sharing so here I am – with yet another kitchen experiment gone well.
It’s really quick to cook, great in taste and makes a great first impression that lasts long. This goes well as an appetizer or even a side dish/ salad. It is a light on oil and salt dish, so there is absolutely no guilt after eating a bowl of this for snack. If you are like me, mushrooms means something which is as good as chocolate! Or very close to chocolate!
It is the perfect soul food. I think it has to be – there is something about the way mushrooms are described in most epic fantasy novels and mushroom gathering by folks of yore and the tales associated with them that really makes them soulful and fascinating.
Balsamic vinegar usually is the star in salads or pasta dishes. And mushrooms once a while, like to shine on their own too. The tricky part in this dish was to let them shine on their own and together as one.
This is why there are no overwhelming spices in the dish. Everything is cooked quickly, each ingredient given its own spotlight of fame in the pan and voilà! The mushrooms with balsamic vinegar are ready to appease you!
Wash mushrooms in running water,taking care to wash each one individually. They have a lot of grime and dirt on them. Allow to dry before dicing.
